Tomatoes Stuffed with Spinach

Overview

Makes about 2 cups; stuffing for 36 cherry tomatoes or mushrooms; 12 servings

Ingredients
  • 1/2 cup sodium-reduced, defatted chicken broth
  • 1 (10-ounce) package frozen chopped spinach
  • 1 small onion, finely chopped
  • 3 tablespoons light mayonnaise
  • 36 cherry tomatoes or large mushrooms
Directions
  • Place broth and frozen spinach block in a small saucepan.
  • Cover and heat on low for 5 minutes, turning block after 2 minutes.
  • When spinach is just thawed, stir in chopped onion and mayonnaise.
  • Simmer uncovered, stirring frequently until liquid and mixture is consistency of creamed spinach.
  • Stuff cherry tomatoes or large mushroom caps and bake.
  • Serve hot or cold.
