Makes about 2 cups; stuffing for 36 cherry tomatoes or mushrooms; 12 servings
Ingredients- 1/2 cup sodium-reduced, defatted chicken broth
- 1 (10-ounce) package frozen chopped spinach
- 1 small onion, finely chopped
- 3 tablespoons light mayonnaise
- 36 cherry tomatoes or large mushrooms
- Place broth and frozen spinach block in a small saucepan.
- Cover and heat on low for 5 minutes, turning block after 2 minutes.
- When spinach is just thawed, stir in chopped onion and mayonnaise.
- Simmer uncovered, stirring frequently until liquid and mixture is consistency of creamed spinach.
- Stuff cherry tomatoes or large mushroom caps and bake.
- Serve hot or cold.
