Fijian Cheesecake

Overview

I was fortunate enough to grab this recipe from the Fijian Facebook website

Ingredients
  • 1 1/2 cups graham or oreo biscuits, crumbed
  • 1/3 cup salted butter or margarine, melted
  • 10 tablespoons Philadelphia cream cheese
  • 1 cup white sugar
  • 1 tbs vanilla
  • 4 eggs
Directions
  • Heat oven to 325F
  • Mix crumbs and butter in bowl, press with plastic wrap into 9 inch baking pan
  • Beat the cream cheese, 1 cup sugar and vanilla until well blended
  • Add eggs 1 at a time, mixing each until blended in.
  • Pour over the crumb bottom
  • Bake for 55 minutes then cool for 30 minutes.
  • Loosen cake and remove rim if you used the proper pan.
  • Refridgerate 3 hours
