I was fortunate enough to grab this recipe from the Fijian Facebook website
- 1 1/2 cups graham or oreo biscuits, crumbed
- 1/3 cup salted butter or margarine, melted
- 10 tablespoons Philadelphia cream cheese
- 1 cup white sugar
- 1 tbs vanilla
- 4 eggs
- Heat oven to 325F
- Mix crumbs and butter in bowl, press with plastic wrap into 9 inch baking pan
- Beat the cream cheese, 1 cup sugar and vanilla until well blended
- Add eggs 1 at a time, mixing each until blended in.
- Pour over the crumb bottom
- Bake for 55 minutes then cool for 30 minutes.
- Loosen cake and remove rim if you used the proper pan.
- Refridgerate 3 hours
