Salmon goes well with many things, but especially breadfruit. Breadfruit's name is derived from the texture of the cooked fruit, which has a potato-like flavor, similar to fresh-baked bread. You can find it available in most tropical areas, so head to your nearest Asian store to see if you can get it. The taste will be well worth it.
- 2 Salmon fillets
- Salmon stuffing
- 1 packet breadfruit
- 1 cup baby carrots
- 1 tablespoon olive oil for drizzling
- Quarter cup canola or vegetable oil for frying
- 4 leaves cos lettuce
- 1 tomato
Wash salmon fillets and add stuffing. Prepare baking tray, place stuffed salmon fillets and drizzle over with olive oil. Garnish with baby carrots. Heat oven to 450 degrees farenheight and place pan in oven for 15 minutes.
Take breadfruit out of packaging, wash and boil in salted water till tender. Drain, cut into wedges, then fry in batches in canola oil. To make salad, wash and dice 4 leaves of cos lettuce and add diced tomato. Serve warm with a side of salad.
