Makes 9 x 5" loaf pan; 20 servings
Ingredients- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1/2 cup brown sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon cinnamon
- 1/4 teaspoon ground cloves
- Grated rind of 1 orange
- 3/4 cup orange juice
- 2 egg whites or egg substitute equal to 1 egg
- 1/4 cup tub margarine, melted
- 1 cup firm, fresh cranberries
- 1/2 cup chopped nuts (walnutes, pecans)
- Sift together flours, sugar, baking powder, baking soda, cinnamon and cloves. Set aside.
- Lightly beat together orange rind, orange juice, egg whites and melted margarine.
- Stir the liquid ingredients into the dry ingredients.
- Coarsely chop the cranberries and add them along with the chopped nuts to the batter. Mix well.
- Pour into a nonstick-sprayed load pan.
- Bake at 350 degrees farenheight for 60 minutes until a toothpick inserted near the center comes out clean and dry.
- Cool on wire rack and remove from pan.
- Wrap tightly to store.
