Cranberry Bread

Overview

Makes 9 x 5" loaf pan; 20 servings

Ingredients
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1/2 cup brown sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon ground cloves
  • Grated rind of 1 orange
  • 3/4 cup orange juice
  • 2 egg whites or egg substitute equal to 1 egg
  • 1/4 cup tub margarine, melted
  • 1 cup firm, fresh cranberries
  • 1/2 cup chopped nuts (walnutes, pecans)
Directions
  • Sift together flours, sugar, baking powder, baking soda, cinnamon and cloves. Set aside.
  • Lightly beat together orange rind, orange juice, egg whites and melted margarine.
  • Stir the liquid ingredients into the dry ingredients.
  • Coarsely chop the cranberries and add them along with the chopped nuts to the batter. Mix well.
  • Pour into a nonstick-sprayed load pan.
  • Bake at 350 degrees farenheight for 60 minutes until a toothpick inserted near the center comes out clean and dry.
  • Cool on wire rack and remove from pan.
  • Wrap tightly to store.
