Spicy Fish Bites

Overview

Quick and easy to prepare in your microwave.

Ingredients
  • 1/3 cup plain low fat yogurt
  • 1/2 teaspoon grated lime peel
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon paprika
  • 1/8 teaspoon pepper
  • 1 pound frozen cod or other white fish
  • 4 lime wedges (optional)
Directions
  • Mix together the yogurt, lime peel, lime juice, cumin, coriander, paprika and pepper.
  • Cut fish into 16 appetizer-sized cubes and add to marinade
  • Chill fish in marinade 2 to 3 hours.
  • Microwave on high 5 to 7 minutes or until fish is flaky. Let stand 3 minutes.
  • Serve sprinkled with paprika and garnished with lime wedges.
