Quick and easy to prepare in your microwave.
Ingredients- 1/3 cup plain low fat yogurt
- 1/2 teaspoon grated lime peel
- 2 tablespoons fresh lime juice
- 1/2 teaspoon ground cumin
- 1/4 teaspoon ground coriander
- 1/4 teaspoon paprika
- 1/8 teaspoon pepper
- 1 pound frozen cod or other white fish
- 4 lime wedges (optional)
- Mix together the yogurt, lime peel, lime juice, cumin, coriander, paprika and pepper.
- Cut fish into 16 appetizer-sized cubes and add to marinade
- Chill fish in marinade 2 to 3 hours.
- Microwave on high 5 to 7 minutes or until fish is flaky. Let stand 3 minutes.
- Serve sprinkled with paprika and garnished with lime wedges.
