This is a great spicy dish that goes great with potatoes and salad.
Ingredients
- 2 Bass or Tilapia fish fillets
- 2 medium whole potatoes, washed thoroughly, leaving skin on
- 2 tablespoons olive oil
- Half teaspoon salt
- Half teaspoon black pepper
- 1 teaspoon dried parsely
- 1 teaspoon dried oregano
- Diced lettuce, capsicum (bell peppers) and onions
- 1 tablespoon Olive Oil, 1 teaspoon Balsamic vinegar, pepper and salt to taste
- Plate the fish and server hit with potatoes and salad
- 1 can tomato puree or whole peeled tomatoes with juice
- 1 teaspoon chili powder
- 2 tablespoons chili sauce
- 1 teaspoon salt
- 1 small diced yellow onion
- Half teaspoon cumin
- Half teaspoon white vinegar
- 1 teaspoon brown sugar
- Half teaspoon black pepper
- 4 cloves garlic
- 1 teaspoon dried or diced oregano (can substitute with coriander leaves)
- Half a teaspoon dried or diced parsely
- 1 dried or fresh bay leaf
- Cut skin on potatoes into half inch thick round slices and mix in a little oil
- Sprinkle over with oregano and parsely
- Combine sauce ingredients in a blender and keep aside
- Add 1 tablespoon of oil in pan and lightly fry fish fillets on both sides until firm
- Lower heat and add sauce and simmer until thickened
- In a separate pan, add one tablespoon oil, add potatoes and cook over low heat
- Sprinkle over with little salt when done
- Toss the diced lettuce, capsicum (bell peppers) and onions together
- Combine Olive Oil, Balsamic vinegar, pepper and salt and pour over salad above
- Place hot potatoes and fish on plate and serve with tossed salad
