Summer Lake Bake

Overview

Makes 6 (4-ounce) fillets; 6 servings

Ingredients
  • 1 1/2 pounds walleye fillets
  • 2 teaspoons lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 large fresh tomatoes, sliced
  • 1 green pepper, sliced in rings
  • 1 1/2 cups fresh or frozen corn
  • 1/4 cup dry bread crumbs
  • 2 teaspoons chopped fresh basil or 1/2 teaspoon dried basil, crushed
  • 1/2 teaspoon dried oregano, crushed
  • 1 tablespoon vegetable oil
  • Chopped fresh parsely, for garnish
  • Lemon wedges, for garnish
Directions
  • Place fillets in nonstick-sprayed, shallow bakingdish.
  • Sprinkle with lemon juice, salt and pepper.
  • Layer tomato and green pepper slices over fish and cover with corn.
  • Combine bread crumbs, basil, oregano and oil.
  • Spread bread crumb mixture over corn.
  • Bake at 350 degrees farenheight for 20 minutes.
  • Serve hot, garnished with chopped parsely and lemon wedges.
