Makes 6 (4-ounce) fillets; 6 servings
Ingredients- 1 1/2 pounds walleye fillets
- 2 teaspoons lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 large fresh tomatoes, sliced
- 1 green pepper, sliced in rings
- 1 1/2 cups fresh or frozen corn
- 1/4 cup dry bread crumbs
- 2 teaspoons chopped fresh basil or 1/2 teaspoon dried basil, crushed
- 1/2 teaspoon dried oregano, crushed
- 1 tablespoon vegetable oil
- Chopped fresh parsely, for garnish
- Lemon wedges, for garnish
- Place fillets in nonstick-sprayed, shallow bakingdish.
- Sprinkle with lemon juice, salt and pepper.
- Layer tomato and green pepper slices over fish and cover with corn.
- Combine bread crumbs, basil, oregano and oil.
- Spread bread crumb mixture over corn.
- Bake at 350 degrees farenheight for 20 minutes.
- Serve hot, garnished with chopped parsely and lemon wedges.
