Nasi Goreng

Nasi Goreng - Indonesian Fried Rice
Overview

This is a great tasting Indonesian dish which will keep you coming back for more!

Nasi Goreng

Ingredients
  • 3 eggs
  • salt and pepper
  • 2 tablespoons olive oil
  • 500g diced chicken breast
  • 2 medium onions
  • 4 cloves crushed garlic
  • 1/2 teaspoon dried shrimp paste
  • 4 cups cold cooked rice
  • 6 spring onions, thinly sliced
  • 2 tablespoons light soy sauce
  • 1 green cucumber, thinly sliced
  • 3 tablespoons onion flakes (optional)
Directions

Beat eggs with salt and pepper to taste. Heat little oil in frying pan and make an omlette with half the beaten eggs. Turn onto a plate to cool (do not fold omlette). Repeat the process with the remaining beaten eggs. When cool, put one omlette on top of the other, roll up and cut into thin strips.

Chop onions roughly and put in blender with garlic and shrimp paste. Cover and blend to a paste.

Heat 3 tablespoons of oil in a large frying pan or wok and fry the blended ingredients until cooked. Add meat to pan and fry, stirring constantly, until cooked. Add 2 tablespoons more oil and when hot, stir in the rice and spring onions, tossing and mixing thoroughly until very hot. Sprinkle with soy sauce and mix evenly.

Serve the fried rice garnished with strips of omlette, fried onion flakes and cucumber.
