Spicy Chinese Chicken

Ingredients
  • 2 chicken fillets, cubed
  • 6 button mushrooms, sliced
  • 12 pieces french bean, sliced
  • 1 small bell pepper, sliced (also called Capsicum)
  • 1 small onion, sliced
  • 6 cloves of garlic, minced
  • 2 teaspoons ginger, minced
  • 1 teaspoon shrimp paste
  • 1 teaspoon fish sauce
  • 2 tablespoons light soy sauce
  • 1 tablespoon dark soy sauce
  • 2 teaspoons chilli paste
  • 1 teaspoon sesame oil
  • 1 tablespoon black bean paste
  • 2 tablespoons chinese cooking wine
  • 2 tablespoons olive oil

 

Heat olive oil in skillet, add onions and fry until caramalized and yellowish. Add shrimp paste, black bean paste, garlic and ginger and sir-fry a little more.

Add chicken fillets and mushroom and stir fry till browned. Add sesame oil, chilli paste, soy sauce, fish sauce, bell peppers and french beans and stir fry until vegetables are tender. Keep adding chinese wine to mixture. Serve with hot and fluffy white or brown, long grained rice. Serves 4. Tip: It tastes great with mixed white and brown Basmati rice.
