Big Aussie Breakfast

Overview
This is nutritious and healthy way to start your day and beats any Fast Food hands down!
Big Aussie Breakfast
Ingredients
  • 1 tablespoon olive or vegetable oil
  • 2 Free range eggs
  • 2 wholemeal burger buns or 4 slices wholemeal bread
  • 1 can 420g Watties Baked Beans (red can)
  • Quarter of small onion, diced
  • 1 fresh chili, sliced
  • 1 small tomato, sliced
  • 1 avocado
  • Lettuce, washed


Directions
  • Heat up the pan and toast the bread on both sides and keep aside
  • Add half the oil, bring to medium heat, crack the eggs and lighly cook on each side. If done correctly, the egg will look white, otherwise, it will crisp up and have a fried texture
  • Layer one side of the bread with margarine and the other with avacado, spread like a paste
  • Layer with lettuce, slices to tomato and then the egg
  • Wash pan and add remaining oil
  • Add diced onions and fry until translucent
  • Add the remaining tomatoes, diced, and cook till soft
  • Add the can of baked beans
  • Add the chilies last (Do not add this first as the strong smell of cooking chili will make you gag)
  • You can serve cooked baked beans on the side or heaped inside the bread
  • Goes nice with coffee or orange juice! Serves 2.
