Vegetarian Chili Bean

Overview

This is a great, low calorie dish which is also quite filling.

Vegetarian Chili Bean

Ingredients
  • 1 and half tablespoon cumin
  • 1 teaspoon black pepper
  • 2 tablespoons garlic powder
  • 2 bay leaves
  • 1 and half small cups of dried black beans
  • 1 and half small cups of dried brown beans
  • 8 cloves garlic, crushed
  • 1 and half onion, diced
  • 2 tablespoons olive oil
  • 1 small cup diced carrots
  • 1 small cup diced capsicum (bell peppers)
  • 1 small cup diced celery
  • 1 teaspoon chilli powder
  • 4 serrano chillies sliced
  • 3 teaspoons salt
  • 2 cans whole peeled tomatoes, crushed
  • Black pepper to taste
Directions
  • Boil the beans in salted water for about 45 minutes or until tender, then drain and keep aside
  • Heat oil in pan and add onions and garlic and sautee until onions are tender
  • Add carrots and cook for 10 minutes
  • Add celery and bell peppers and cook for another 5 minutes on low heat
  • Add black pepper, cumin, garlic powder and bay leaves
  • Blend crushed tomatoes, chilli powder and serrano peppers in a blender and add to pan
  • Cook high heat for 10 minutes, then add the cooked, drained beans
  • Simmer on low heat for 15 minutes
  • Serve hot
