This is a great, low calorie dish which is also quite filling.
Ingredients
- 1 and half tablespoon cumin
- 1 teaspoon black pepper
- 2 tablespoons garlic powder
- 2 bay leaves
- 1 and half small cups of dried black beans
- 1 and half small cups of dried brown beans
- 8 cloves garlic, crushed
- 1 and half onion, diced
- 2 tablespoons olive oil
- 1 small cup diced carrots
- 1 small cup diced capsicum (bell peppers)
- 1 small cup diced celery
- 1 teaspoon chilli powder
- 4 serrano chillies sliced
- 3 teaspoons salt
- 2 cans whole peeled tomatoes, crushed
- Black pepper to taste
- Boil the beans in salted water for about 45 minutes or until tender, then drain and keep aside
- Heat oil in pan and add onions and garlic and sautee until onions are tender
- Add carrots and cook for 10 minutes
- Add celery and bell peppers and cook for another 5 minutes on low heat
- Add black pepper, cumin, garlic powder and bay leaves
- Blend crushed tomatoes, chilli powder and serrano peppers in a blender and add to pan
- Cook high heat for 10 minutes, then add the cooked, drained beans
- Simmer on low heat for 15 minutes
- Serve hot
